What recommendations for travelling from Trieste back to London, via Paris and Eurostar. Is the Eurorail Pass vald for the overnight sleeper train from Venice or Milan?

Almost all trains in Europe are covered. Italo in Italy and Ouigo are notable exceptions on your route.

Seat 61 has a good route guide here

option 4, with the sleeper from Venice to Stuttgart, or option 1, by fast train to Milan and then Paris, wood be good options for you

The direct Fresciarosso from Milano to Paris is also excluded, but the TGV on that Route is included.

I would recommend the option with the night train. (A couchette reservations is not that much more expensive then the reservations for travelling via Paris). Its recommended to reserve them early as they have dynamic reservations costs.

Its the more comfortable option in my opinion. So a decent option even if you continue from Stuttgart via Paris. (i first missed the part that you want to travel via Paris)
