We have purchased tickets on eurail.com on the app and all my trips are saved to my pass, each journey requires a seat reservation. Our first train is on oct 6 and I cannot reserve a seat.

maybe it´s already to late to reserve as some trains need a “paper reservation” and Eurail stop to sell these reservations quite early as the reservtion itsell still need time to be shipped :)
Which Route are you looking for :) As there are maybe other websites to reserve with Eurail :) worst case you can always reserve at the station :)
