You can book this train up to 90 days in advance. I have a question about the wording of this sentence. Does it mean you can only reservate before the 90 days. Or is it stil possible for me and my girfriend to reservate seats for the trains in the 90 days in adance time window?

It means that the train usually opens for Reservations 90days in advance.
30days is common in Poland
60days in France and some International trains
90days in Germany/Austria
Some train can be reserved already 11months in advance (Eurostar)
This means that the first possible day to buy a reservation for the train is 90 days before the departure. After that reservations can be made as long as there are seats avaliable.

En neem die 90 met een flinke pot zout-het gaat echt niet dag per dag maar af en toe in een blok van dagen/weken. Of vaak kan het flink langer duren voordat dat enorme ongeduld+die ontzettende angsten voor volle treintjes kunnen worden weggenomen als er weer eens werk langs de railzen of andere wijzigingen aankomen

Dat gaat vaak wel per dag. Er zijn alleen afwijkingen bij dienstregelingswijzigingen of werkzaamheden of als je RENFE, SNCF of Trenitalia heet.
