We will be traveling from Sicily, through Florence to Lake Garda and eventually up to Paris with our mountain bikes. They are expensive and I do not feel comfortable leaving them in the luggage area. If we booked a family sleeper car, could we bring the bikes into the room?

In Italy, you’d need to dissasemble the bike for this. BTW: With just a single bike in a sleeper compartment, the room would be full (if you’d get it in) if it’s not.
Officially: “Per poter viaggiare in treno con la bici montata al seguito, è necessario che la tua bicicletta non sia in nessun caso più lunga di due metri; che tutti i treni interessati dal viaggio ammettano il trasporto delle bici, e che tu abbia convalidato il biglietto previsto per la bici prima della salita a bordo. Il trasporto della bicicletta montata non è mai consentito sui treni di media e lunga percorrenza ovvero sui treni Frecciarossa, Frecciargento, Frecciabianca e Intercity Notte.”
There are just some IC trains where there is an area for bikes at all. This has to be booked (3,50 €) but is not wanted anyway.
It’s allowed to take a bike with you only if (officially): “Puoi rendere smontabile una delle due ruote, e utilizzare una sacca delle dimensioni previste per portarla in treno (80 x 110 x 45 cm), sia questo un treno regionale, un IntercityNotte od Intercity o una delle tre Frecce, Frecciarossa, Frecciargento o Frecciabianca.”
So in a night train in Italy, you can bring a single bike with you disassembled and contained in a bag or a fully closed folding bike and the size should not exceed 80 x 110 x 45 cm.
(There is no night train from Italy to Paris.)
