Hello fellow railers! Does anyone know if there is a direct train from Latour de Carol to Perpignan?

Note the “train jaune” to  Villefranche - Vernet-les-Bains, where you can catch a connection to Perpignan [currently pertly replaced by coach, indeed] is very scenic (especially in summer with the open cars) but very slow and infrequent (1 to 2 trains per day) so check the timetable works for you.

It’s also possible with the main line via Toulouse and Narbonne, in about the same time (6 hours). The scenery is less spectacular but there are several possibilities in the day.

There isn't. You need to change in Villefranche - Vernet-les-Bains and currently also in Ille-sur-Têt, because there's a temporary bus replacement. Timetables on www.sncf-connect.com.
