I’m not EU citizen. This time I go to Zermatt and after travel by train to Austria and back to Zurich. Does Eurail global pass covers train to Zermatt from Zurich and back ?

Yes.

However it may be cheaper to buy tickets for this journey separately if it is the only rail travel you are making.

If I buy Eurail my trains trip would be Zurich to Zermatt , Zermatt to Zurich , Zurich to Vienna , Vienna to Salzburg. Salzburg to Zurich . Will that all be covered by Eurail ?

Hi , is it should be within 1 calendar months or just 30 days? I’m traveling September- October but les than 30 days . Is it already 2 months ?

It's 1 month, as specified. E.g. 15 September - 14 October.
