On 2 of your travel days you can travel in your own country. This can happen at any point of the trip.
What you'd like to do is totally possible. :)
Remember to book Eurostar well in advance as it's a very popular route and there's a passholder quota. 30€ mandatory reservation from/to Belgium/France, 35€ from/to the Netherlands.
There are more trains from/to Brussels than Amsterdam in case Amsterdam or Rotterdam have sold out.
