Using the Global pass and traveling from Hamburg to Odense. Two of the legs say “open seating.” As first time rail travelers, are we really going to be able to find seats?! Please advise.

Usually the train from Hamburg to Odense is a direct train, but you might be travelling during some construction works.
Usually yes unless you are travelling during really busy times. On regional trains it happens more often that you have to stand for part of the journey if it is busy. (atleast my experience for Germany)
But at the starting station of a train it is the easiest to find free/unreserved seats
