I want to go from Dresden to Narvik. I want to depart at 7.55 pm and arrive 12.35 pm (2 days plus). The journey takes 40 hours in total. Does that count as two days of traveling?

Every day when you board a train is a travel day, thus it is not possible to say how many travel days that will be without knowing the exact departure and arrival time of the trains you will take.

Yes, that will be two travel days.

Not necessarily. If there is a train change in Boden it will be 3 travel days. With the direct night train from Stockholm to Narvik it will be 2 travel days.
