Tips & tricks to travel through Spain-France-London (stonehenge) & Netherlands (possibly) as first timer?

Hello everyone, I am very blessed and excited to visit this gorgeous continent!

Originally I planned a 3 week vacation which is looking like a month+ long at this moment. The goal of my trip is for a possible relocation as things aren’t looking so good in California, I appreciate in advance any suggestions, shortcuts, foodie recs, stargazing spots, sunrises/sunsets (crazy, I’m used to only seeing the sunsets!). Hey!

some general things:

For Spain you need reservations for almost all trains. You can do it online with a fee or at the stations with a smaller fee than online (and MD is free at the stations). Spain has a lot to offer - south is very different from the north. If you prefer warm climate, better stick to the south. In the north it is often rainy. 

For France you can travel on most of the TER and a few IC without a reservation. The rest of long distance trains requires one and its dynamic. 10-20€, TER 1,7€.

UK is a paradise about interrailing. Only Eurostar and nighttrains require a reservation. I recommend first class in UK as on the mainline you get free snacks and drinks from some companies. 
 

good places: Alicante, sevilla, Manchester, London, Granada, St. Ives, Lake District, Scottish Highlands, Pyrenees in France, Bordeaux, Montpellier.
