I'm booked on the 7:01am london St Pancras to Paris Eurostar on Thursday. I'm booked in plus. The first train from Cambridge arrives in St Pancras at 05:59. The recommended check-in is at 05:46 but check in closes at 6:31. Am I safe to connect from the 05:59 Cambridge train?

Realtimetrains.co.uk can look back 1 week and this train was on time almost every day, except once it arrived 8 minutes late.

So it looks to be fairly safe.

In my experience, there have often been folks still coming through from check-in right up until the train boards, so you shouldn’t have any trouble.  Possibly not once boarding actually starts, but certainly after I have been checked in for an hour or more.

I’ve never got one that early, but if it’s like other times of day they will likely only be opening access to the platforms after 06:50 or so.
