Do I buy a ticket for the days I use the train to travel to those places or for the duration of my full trip?

I mean, if I want to go from Spain to Paris, Brussels and Amsterdam and I want to spend a couple days in Paris and Amsterdam, I buy a ticket for the days I use tue train to travel to those places or for the duration of my full trip?

If you buy a pass then that is your ticket. You need to register every train you use in the app (mobile pass) or on the pass cover (paper pass). Also see this page.

For trains with mandatory reservations, you need to book reservations too.
