If I was to travel to one country using my Interrail ticket and then fly to another country will I be able to continue using my Interrail ticket from a different country? or must I depart from the same country I arrived in initially?

Yes it´s possible :)

Just note that you have one Outbound and one inbound day in your Country of residence :)

I did once London - Paris and took from Paris a train that was not covered by Interrail to Venice and used from there without any problem
