I have a Eurail pass for myself, my husband and my baby (1 year old). For seat reservations they are including a fare and seat for the baby, although he will be on my lap. How can I change it?

Just don't buy a seat reservation for them. Per the website :
- Children under 4 travel for free and do not need an Eurail Pass. You may be asked to sit a child under 4 on your lap during busy times.
Where are you trying to buy and which route ? It's generally cheaper outside Interrail/Eurail (extra booking fees). Have a look at :

So, I can just book 2 reservations and that should work? Does that mean I don’t include child while booking the reservation ticket?
